What is portion of food?

It’s such an innocent and simple question but there’s so much that needs to be taken into account when preparing and catering for crowds of people.

Around 18 months ago we conducted an extensive survey of our customers and found that there are a number of key issues that people strive to “get right” when they order their catering. The top three answers were interesting:

  1. On time delivery
  2. Having enough food
  3. Not having too much food

Numbers 2 and 3 above focus on portion size and that’s why we put a lot of work into getting the balance just right.

Similar to the airlines when they work out their passenger weights (they allow for a male average of 83-85kg and a female average of 68-69kg – they even vary it depending on whether it’s summer or winter), we work with averages when we calculate our portion sizes. I’m the first to admit that it’s not an exact science. There are a large number of factors we need to take into account including: Male/Female ratio, Ethnicity, Time of day, Number of options available to choose from, How long people have to dine, Age of the diners, How active the workforce etc etc -the list goes on…………

Suffice to say, the more information we can have about your event, the more likely we are to arrive at the “Goldilocks” portion size – not to large, not too small but “juuust right”

As we say, our sole aim is “to make you look good” so we appreciate the time you spend with us on the phone and via email answering our questions and working with us to get the numbers right.

And whatever happens, we live off feedback……….
