Out with the old and in with the new (more environmentally friendly)

You know the old saying “two steps forward and one step back”? Well here’s a classic example of this…….

Last month you may remember I mentioned in the newsletter that I was changing our disposable boxes from a plastic coated white box to a Kraft style matt box that is decompostable. While the reaction from ALL of our clients has been really positive, we now find that because the boxes are Matt, the cling film we have to use to cover the food doesn’t stick to the box and as a result we are having to use more cling film so it can go all the way around the box and stick to itself!

I’m sure you’ll appreciate that the most important things when it comes to prepared food delivery is food safety and hygiene. The need to provide a secure barrier between the food product and the outside world is paramount – particularly during it’s transportation.

So while we’ve managed to reduce our carbon footprint with the change of boxes, this gain is being offset by the increase in the amount of cling film we’re having to use.

I’ve recently trudged back to the drawing board looking for a solution that doesn’t involve lids with PVC inserts (which are NOT decompostable).

Enter stage left – “biodegradable cellulose acetate windows”!

I’m now working with our box supplier (Boxworks) who are putting together some mock ups and quotes for some lids with this fantastic new technology - biodegradable cellulose acetate windows.

I’m really hoping this will come together as I am determined to see improvements in our carbon footprint. After all, we owe it to our children!

That we’ve just run down our stock of our old white plastic coated disposable platters and we’ve started using more environmentally friendly kraft cardboard platters that decompose more readily. We’d love to know what you think of them so feel free to drop us a line.

Cooking Tip

The inside of the garlic clove is the sweetest. If your recipe requires raw garlic, only squeeze the clove once as the outer is bitter. If you’re cooking the crushed garlic, you can crush it twice and then cook it as it will sweeten as you cook it.
